I have a sweet tooth. That is very well evident from my blog. But the one recipe which I love the most because I can eat it guilt free and can also gift it on Diwali , is Date Nut Squares.
It has zero refined sugar, healthy nuts and iron rich dates. You can eat it any time of day, can take away on the way to office or for hunger pangs at office and even for those late night cravings.
It’s a very customisable recipe. You can increase or decrease the quantity of any but or seeds but in the end the total quantity of the nut and seeds should remain same.
- 1 cup dates , pitted
- 1 cup hot water
- 1 cup cashewnuts
- 1 cup almonds
- 1/2 cup walnut
- 1/4 cup pistachios
- 1/4 cup sesame seeds
- 1/4 cup pumpkin seeds
- 1/2 cup desiccated Coconut
- 1/2 cup honey
- 1/4 tsp tsp salt
- 1/2 cup rolled oats
Soak the pitted dates in 1 cup hot water for at least 2 hours.
After 2 hours, strain the dates and blend to a smooth paste without adding any water.
In a non stick pan, roast cashew, almonds, walnut, pistachios, sesame seeds and pumpkin seeds on low flame till they turn crunchy. It takes roughly 5-7 minutes on low flame.
Next add , desiccated coconut to the nuts and roast for couple of minutes.
Transfer roasted nuts to a big mixing bowl.
Now in the same non stick pan, dry roast the rolled oats on medium flame till they become aromatic.
Cool slightly and grind them into a powder in a mixer grinder.
Now in the same pan add dates paste and cook on low flame till the paste thickens.
Add in the roasted nuts and seeds, honey, salt and oat powder.
Combine well and cook till the mixture thickens.
Line a 8″ square tin with parchment paper and transfer the mixture and press into the tin with a spatula. It should form a thick block
Place the tin in the refrigerator for at least 1-2 hours till set.
After it is set, un mould and cut into bite size squares.
Store in an airtight container in refrigerator for upto 4 weeks.
